Tulipanes de Parmesano con berenjena y aceituna negra

.



Este fin de semana hicimos una cena y entre otras cosas, Nico preparó unos tulipanes de queso Parmesano con un relleno de berenjenas y aceituna negra. Estabamos cantando en falsetto ésta canción mientras cocinábamos. Es broma.







Ingredientes (para el relleno) (para 10 tulipanes)
  • 1/2 berenjena
  • 2 zanahorias
  • 1/2 cebolla
  • 200g de tomate triturado
  • 100g de aceitunas negras
  • albahaca fresca
  • sal
  • pimienta
  • aceite de oliva



Elaboración



Pelar y lavar los ingredientes. Picar finamente en brunoise la berenjena, la cebolla, la zanahoria (si os resulta muy complicado con la zanahoria, simplemente ralladla) y la albahaca. Triturar las aceitunas negras (sin hacerlas puré - dar un par de golpes con la batidora).
En una sartén con aceite, pochar la cebolla. Añadir la berenjena y la zanahoria.
Dejar en el fuego unos minutos hasta que esté todo bien rehogado. Incorporar el tomate y dejar reducir. Añadir la albahaca y salpimentar. Cuando esté casi listo, agregar la aceituna negra y remover.


Ingredientes
(para 10 tulipanes)
  • 500g de queso Parmesano (en caso de ser muy caro, podéis usar queso Grana Padano).


Elaboración


Precalentar el horno a 180º C.
Rallar el queso. Sobre papel de horno, hacer un círculo de unos 10cm. de diámetro de queso (poner una capa bastante gruesa de queso). Meter en el horno y dejarlo hasta que los bordes empiecen a dorarse (entre tres y cinco minutos). Una vez fuera del horno, meter el queso con el papel en un molde circular (tipo muffin) para que tome la forma adecuada. Hay que hacerlo cuando el queso aún está fundido para que no se seque sin la forma correcta. Dejar secar en el molde, quitar el papel de horno y dejarlo secar sobre un papel absorbente.
Repetir acción con cada tulipán.

Para finalizar la elaboración, rellenar los tulipanes con la berenjena. Se puede decorar con un poco de cebollino picado, por ejemplo.

Parmesan tulips with aubergine and black olive

We recently cooked a dinner for some people and, among other things, Nico made this delicious recipe of Parmesan tulips with aubergine and black olive. While we cooked, we repeatedly sang this song in falsetto. No, we're kidding.

Ingredients (for the stuffing) (for 10 tulips)

  • 1/2 aubergines
  • 2 carrots
  • 1/2 onion
  • 200gr crushed tomatoes
  • 100gr black olives
  • fresh basil leaves
  • salt
  • pepper
  • olive oil
Method

Peel and wash the vegetables. Thinly chop in brunoise the aubergine, onion and carrot (if chopping the carrot is too hard, simply grate it) and the basil leaves. Crush the black olives without reducing them to purée.
In a frying pan, poach the onion with some olive oil. Then add the aubergine and carrot and let it cook slowly. Add the tomato and let it reduce. Add the basil, salt and pepper. When almost ready, add the black olives and stir a bit.


Ingredients (for 10 tulips)

  • 500gr Parmesan cheese (if it's too expensive you can use Grana Padano)

Method

Preheat the oven to 180°C (356°F).
Grate the cheese.
Over bakery paper, make circles of around 10cm of diameter with a generous amount of cheese. Put in the oven until the sides start to brown (between 3 and 5 minutes). Take out of the oven and quickly place on small baking pans (like the ones used for muffins, for example) so it can take on the appropriate shape. Let it dry on the pan for a while, take out the bakery paper and let it completely dry on a plate with absorbent paper.
Repeat for each tulip.

Once they are ready, place some aubergine and black olive sauce inside of each tulip, as pictured. You can decorate it with a bit of chopped chives if you wish.

Bizcochos con Glasa Real

Mientras hacíamos estos bizcochos decorados con glasa real, estuvimos escuchando temazos como éste.





La receta para el bizcocho es muy sencilla, y cada cual tiene sus técnicas. Os vamos a poner los ingredientes que hemos usado, pero las cantidades dependen del molde que vayáis a usar o la cantidad que queráis hacer.
  • huevos
  • harina
  • azúcar
  • mantequilla
  • cobertura de chocolate negro
  • levadura
  • leche
  • sal
Hay todo tipo de recetas por Google, y nunca os equivocaréis mucho. En muchas utilizan cacao en polvo en vez de tabletas pero nosotros preferimos fundir el chocolate negro y añadirlo a la mezcla.

Un consejo: para derretir la mantequilla y el chocolate, metedlos en el microondas en modo "descongelar" (no ha de estar totalmente líquido cuando lo saquéis, ya que se derretirá por completo con el calor residual).

Hoy vamos a enseñaros a hacer Glasa Real, que le da un toque más divertido y una textura diferente a algunos bizcochos y tartas.




Ingredientes

  • 250 gr. de azúcar glas
  • 1 clara de huevo
  • 8 gotas de limón
Elaboración




Batir la clara de huevo con un tenedor e ir añadiendo al mismo tiempo el azúcar glas poco a poco hasta que tenga la consistencia deseada (depende de si queremos recubrir/bañar una elaboración, para lo cual usaremos menos azúcar glas, o si queremos hacer dibujos o formas sobre una elaboración, para lo cual usaremos entre 200 y 250 gr. de azúcar glas). Hay que poner limón para que no cristalice el azúcar.

Si queréis jugar con los colores, podéis añadir unas gotas de colorante alimenticio a la glasa real.

Para decorar los bizcochos, podéis usar un cornet. Simplemente tenéis que hacer un cucurucho con la punta muy fina de papel de horno.

Buns with royal icing

While making these chocolate buns decorated with royal icing, we were listening to this particular hit.

The recipe for the buns is really easy and each person has their own technique. We are going to list the ingredients we used, but the measurements depend on the mold you'll be using or the quantity you want.

  • dark chocolate

You can find many good recipes online, and you'll never get it wrong. Many recipes list chocolate powder as an ingredient but we prefer using dark chocolate and melt it.
Here's a piece of advice: in order to melt the butter and chocolate, put them in the microwave in the 'unfreeze' mode for about three minutes (it doesn't have to be completely melted when you take it out, it will finish unfreezing with the residual heat).

Today we are going to teach you how to make Royal Icing, which will bring a fun and different touch to your pastries.


Ingredients

  • 250gr. powdered sugar
  • the white of an egg
  • 8 lemon drops
Method


Whisk the white of the egg with a fork while slowly adding the powdered sugar until getting the right consistency (less sugar will be used if we want to coat the bun, whereas 200gr or 250gr of sugar will be used if we want to use the icing for decorating sweets). Lemon is needed so the sugar doesn't crystallize. If you want to play with colors, you can also add some drops of food coloring to the icing.

In order to decorate the buns, you can use a cornet, which you can make by using some bakery paper and turning it into a cone with a very thin tip.

Cavatappi a la ricotta con tomate

Después de unas buenas vacaciones, volvemos con recetas de todo tipo.


Este es un plato muy sencillo pero algo distinto y más original que la clásica salsa boloñesa, carbonara, napolitana... Mientras cocinábamos este plato estuvimos escuchando "The House of The Rising Sun" de The Animals.






Ingredientes (para 2-3 personas):

  • 250 gr. de pasta Cavatappi
  • 125 gr. de ricotta
  • 350 gr. de tomates cherry pera
  • Albahaca fresca
  • Aceite de oliva
  • Sal y pimienta


Elaboración


Cortar los tomates por la mitad. En una cazuela, cocer la pasta. Mientras tanto, saltear en una sartén con poco aceite los tomates ya cortados. Lavar y picar unas hojas de albahaca. Escurrir la pasta y añadirla a la sartén de los tomates. Agregar la albahaca, dar unas vueltas a la pasta, e incorporar la ricotta poco a poco. Salpimentar, mezclar bien, y volver a saltear un poco. Servir y decorar con unas hojas frescas de albahaca.

P.D.: Si la pasta queda demasiado densa, añadir un poco de aceite de oliva.

Cavatappi with ricotta and tomato

We're finally back after the holidays with all kinds of recipes.

This is a very easy recipe, but somewhat different and more original than the typical bolognese sauce. While we cooked this dish, we listened to "The House of The Rising Sun", by The Animals.

Ingredients

  • 250gr Cavatappi pasta
  • 125gr ricotta
  • 350gr cherry plum tomatoes
  • fresh basil
  • olive oil
  • salt
  • pepper
Method

Wash the tomatoes and cut in half. In a saucepan, boil the pasta. Meanwhile, sauté the tomatoes in a frying pan with a bit of olive oil. Wash and chop the basil leaves. Drain the pasta and add to the frying pan with the tomatoes. Add the basil, stir, and slowly add the ricotta. Season, stir well and sauté the whole a little bit. Serve and decorate with some basil leaves.

P.S.: if the pasta ends up too dense for your taste, add some olive oil.
