Milhojas de berenjenas

Hoy os enseñamos a hacer un milhojas de berenjenas, plato fácil y vistoso. Mientras tanto, escuchamos "Gone Man" de Eels.





Ingredientes

  • 1 berenjena
  • 3 tomates maduros
  • 1 cebolla
  • 2 bolas de mozzarella
  • queso parmesano rallado
  • orégano
  • albahaca fresca
  • aceite de oliva
  • sal
  • pimienta

Elaboración

Lavar las verduras y cortar muy finamente en rodajas la berenjena y el tomate (es mejor meter en agua hirviendo un instante los tomates para pelarlos). Cortar en juliana la cebolla.

En un cazo, pochar la cebolla con un poco de aceite; para que sude, añadir un poco de sal.
En una sartén, dorar brevemente las rodajas de berenjena y después las de tomate (si el tomate está muy maduro, no hace falta dorarlo).
Precalentar el horno a 180ºC.
Cortar la mozzarella en rodajas. Sobre una bandeja de horno, poner papel sulfurizado (de horno). Sobre el papel, montar el milhojas. Para esto, colocar una lámina de berenjena, una de tomate, un poco de cebolla, una rodaja de mozzarella, un poco de albahaca, sal, y orégano. Repetir para conseguir más altura. Acabar con una rodaja de berenjena, sobre la cual se pondrá parmesano rallado para gratinarlo.
Introducir la bandeja con los milhojas en el horno hasta que el queso parmesano esté totalmente gratinado.

Aubergine mille-feuille

Today we are going to teach you how to make an aubergine mille-feuille - an easy and eye-catching dish. Meanwhile, we are listening to "Gone Man", by Eels.

Ingredients

  • 1 aubergine
  • 3 ripe tomatoes
  • 1 onion
  • 2 mozzarella cheese balls
  • grated Parmesan cheese
  • oregano
  • fresh basil leaves
  • olive oil
  • salt
  • pepper

Method

Clean the vegetables and thinly slice the aubergines and tomatoes (it is advised to boil the tomatoes for a few seconds in order to peel them). Julienne the onion.

In a small saucepan, poach the onion with a bit of olive oil; add some salt in order for it to sweat.
In a frying pan, briefly brown the aubergine slices and then the tomato slices (if the tomato is too ripe, there's no need to brown it).
Preheat the oven to 180°C (356°F).
Slice the mozzarella. Place some bakery paper over an oven tray. On this paper, start building the mille-feuille. In order to do that, start with an aubergine slice, followed by a tomato slice, a bit of onion, a mozzarella slice, a bit of basil, salt, and oregano. Repeat to make the mille-feuille higher. Finish with an aubergine slice, on top of which a generous amount of Parmesan cheese will be added.
Place the tray into the oven and leave it there until the Parmesan cheese is gratiné.
