Solomillo a la manzana

.

Hoy nos hemos pasado el día escuchando a Selfish Whales mientras preparábamos (más bien Nicolás, que se lo ha inventado) este (sofisticado) plato de medallones de solomillo de cerdo con manzana, cebolla caramelizada, y salsa de yogur, manzana y nueces.




Ingredientes (para 2 personas)

  • 1/2 solomillo de cerdo
  • 1 manzana
  • 1 yogur natural
  • zumo de 1/2 limón
  • 1 cebolla
  • 2 nueces
  • azúcar
  • sal
  • pimienta
  • 2 clavos
  • mantequilla
  • aceite de oliva
  • vinagre de módena


Elaboración

Descorazonar la manzana (nosotros hemos utilizado una Granny Smith). Cortar una mitad en finas láminas y la otra, pelada, en dados. Poner las láminas en agua con limón para que no se oxiden. Poner los dados en una cacerola con mantequilla a fuego lento y añadir dos clavos.
Picar la cebolla en juliana. Meterla en una cacerola con aceite y dejar pochar. Añadir sal para que sude y tapar.
Partir dos nueces en cachos pequeños (o aplastar con el cuchillo) y añadir a la cazuela con manzana. Verter el yogur cuando la manzana esté pochada. Dejar que dé un hervor y triturar. Mantener a fuego suave un rato.
Agregar dos cucharadas soperas de azúcar a la cebolla y un chorrito de vinagre de módena. Subir un poco el fuego.
Colar la salsa de manzana y meter en un biberón (a falta de biberón, dejar en un bol y servir con cuchara después).
En una sartén, poner aceite y marcar el solomillo previamente salpimentado.
Sacar la cebolla una vez lista y reservar.
En otra sartén, dorar con mantequilla la mitad de las láminas de manzana.
Cortar el solomillo en medallones y terminar de hacerlos en la sartén.

Servir y añadir un poco de sal Maldon.

Este plato, al ser un poco dulce, también es ideal para pequeñas tapas ya que así el sabor no empalaga demasiado a quienes no les gusta tanto la mezcla de dulce con salado.

Sirloin steak with apple


We've spent the day listening to Selfish Whales, while we cooked (well, rather Nicolás, who made this recipe up) this (sophisticated) dish consisting of pork sirloin steak with apple, caramelized onion and yoghurt, apple, and walnut sauce.


Ingredients (for 2)

  • 1/2 pork sirloin steak
  • 1 apple
  • 1 yoghurt
  • 1 onion
  • juice of 1/2 lemon
  • 2 walnuts
  • sugar
  • salt
  • pepper
  • 2 cloves
  • butter
  • olive oil
  • balsamic vinegar
Method

Take out the centre of the apple (seeds, etc.) (we used a Granny Smith). Thinly slice one half and peel the other half and dice it. Put the slices in some water with lemon so that they don't rust. In a saucepan with some butter, add the apple dices and the cloves.
Julienne the onion. Poach it in a saucepan with some olive oil. Add salt so it can sweat and cover.
Crush the walnuts and add to the saucepan with the apple. Once the apple is poached, add the yoghurt. Bring to the boil for a minute and grind. Let it cook for a while.
Add two tablespoons of sugar and a trickle of vinegar to the onion. Turn up the heat.
Drain the apple sauce and put it in a bowl so you can serve it with a spoon later.
Season the sirloin steak. Brown in a frying pan.
Once the onion is ready, keep aside.
In another frying pan, brown half of the apple slices with some butter (the other half you can use as decoration once the dish is ready, as you can see in the pictures above).
Cut the sirloin steak in médaillons and finish cooking them in the frying pan.

Serve and add some Maldon salt.

Since this dish contains caramelized onion, it's a bit sweet and having a big portion can be a bit overwhelming for some, so it's a good recipe for a starter too, instead of a main dish.
